Episode 12 - 3 Ingredient Delta Pops
Just in time for summer solstice, I’ve got a very easy, fun and fairly healthy recipe for you that is PERFECT to enjoy with a friend on a hot day. It’s my most favorite time year!
In this sun soaked installment of Back to the Garden, I am joined by my dear friend Azul Zapata, who serenades us with her hopeful anthem, MAGIC, before we zoom to the kitchen, whip up some Delta Pops and answer a few questions from fans who were watching live on instagram. Ingredients : only three!
Vanilla Yogurt (2 cups)
*option to try this with just plain Greek Yogurt, the fruit will pack in so much natural sweetness
*We had a fan ask what you sub if for a vegan/ DAIRY FREE approach: Coconut Milk! I recommend coconut milk over almond or Oatmilk because coconut will still give you the creamy dreamy consistency.
Fresh fruit, 12 oz. - 2 cups <— I used strawberries and blueberries. The sky is the limit! What is fresh and in season? Peaches, Apples, Papaya, Pineapple, ,Watermelon. Ah, the pop-ibilities…
Honey, 1/4 - 1/3 cup <— feel this out based on how sweet your yogurt and fruit are. you barely need it.
Equipment:
A blender
Popsicle molds
Instructions
Hull and chop your strawberries and have 2 cups ready to go. Set aside a little bit more too.
Blend or PUREE 2 cups of strawberries
Add in yogurt and honey and blend again.
Sprinkle pieces of whole fruit into the popsicle molds first BEFORE you pour the blended mixture in. This will make the popsicle VERY pretty when you take them out of the molds :)
Carefully pour your mixture over the fruit chunks into the molds. Try not to overfill and remember it will expand when freezing, so seriously don’t over fill.
Pop those pretty babies in the freezer and forget about them for 5ish hours. Go outside and plant things and splash in the water and enjoy summer time. Get hot and sweaty. Then take off your shoes, have a Delta Pop.
Pro- Tip:
These can be tough to get out of the molds. Run warm water over the top before you tug at them.
Extra Credit:
Try making these ADULTA DELTA POPS by using less yogurt and adding a 6-8 oz of vodka to the mixture. Be sure to LABEL those though. Let me know how those turn out. Yum.
