Thankful Cooking

Food is love. Food is history. Food is community. At the center of almost all experiences and memories, there are tastes and shared stories of the people that brought those tastes into your world and onto your table. To get you ready for Thanksgiving, I’m sharing two recipes you can add to the spread at any family or friend gathering— a thing I know many of us are yearning for as this pandemic stretches on.

In this November episode, I had the honor of visiting Abanitu Organics in Person County, NC and spending the day with the wise and incredibly generous owner, Obie. He shared with me about the ancestral legacy of Abanitu and the history and sacred significance of Collard Greens.

I’ll show you simple way to get these nutrient rich dark leafy greens ready for prime time and I also share a recipe near and dear to my heart: Spicy Cranberry Relish. This was introduced to us by my Aunt Susan from North Dakota. She who is one of the better cooks I know, and I‘ve learned a lot from her. She put this on our table when I was in High School and we were all blown away. Now it has been on our table every Thanksgiving for the last 25 years. One of us always makes it and brings it and it’s been fun to watch the recipe pass from one family member to another, each person putting their own twist on it. There are all kinds of ways you can modify it. But no matter how it gets modified, it has always been a hit! 

It has been special to cook and share with all of you as we kick off a Holiday season that is bound to be very different from others. For anyone that is feeling isolated, or far from family, I hope this episode might inspire you to try making some new things in the kitchen this year and call up a family member or friend to compare notes and show them what you made. 

I am grateful to everyone that has joined us Behind the Door this year. It has allowed us to keep going. To say we are thankful is an understatement and if I could cook for all of you at once, I would. I just need an industrial kitchen first! Sending love to all of you, near and far.
